Hanoi Cooking Centre is both a restaurant and a cooking school run by an Australian expat who has lived in Vietnam for roughly ten years. All the chefs are Vietnamese and trained at KOTO, a hospitality training center and restaurant in Hanoi and Saigon. The centre is located in Truc Bach, a popular area of the Ba Dinh district that is about 10 minutes north of the Old Quarter.

Hanoi Cooking Centre is one of a handful of cooking schools in the capital. It’s jointly owned by long term Australian expatriate chef Tracey Lister and her Hanoian business partner, Linh Dinh Phung. It’s a purpose built cooking school with excellent Vietnamese chefs running the classes. Head chef, Nguyen Manh Hung, is a regular on Vietnamese TV and made an appearance in Gordon Ramsay’s Asian series. Hung and his team are a real asset and make the class special with their combination of knowledge and good humour.

Anyone lucky enough to have traveled to Vietnam knows its cuisine is among the best in Asia, characterized by its delicate flavors and fresh local ingredients. At the Hanoi Cooking Center, visitors can learn the secrets and techniques used in preparing traditional Vietnamese dishes so they can be recreated back home. 

A typical half-day cooking class at the Hanoi Cooking Center begins with a visit to a local market, where students learn about typical Vietnamese ingredients (and how to buy them). Back in the kitchen, students pair up for a hands-on lesson before sitting down to sample their creations for lunch.

Class themes and dishes vary from day to day and might cover Vietnamese street food, food from Hanoi and the Northern Highlands, food from the coast, vegetarian dishes, spring rolls, barbecues and salads. The school also offers international cooking classes and classes for kids.
